I’ve recently been on an intense white sourdough feeding cycle because of Panettone preparation. Regular feeding means a lot of discards. The sourdough itself is pretty active: doubles volume without issues and after 16 hours starts losing gas, turning into a liquid – what I understand is the result of protease‘s activity.

But yeah, discards. I quickly looked into Eliza Mórawska’s book “O Chlebie” (About Bread) (sources). I found a toast bread recipe in there with 20 grams of fresh yeast being used. What if I tried sourdough? Only one way to find out, really.

In reality I made two alterations: I replaced 20 grams of fresh yeast with 200 grams of sourdough in its peak activity phase and added 50 grams of water to the recipe – the strong flour that I currently use is very strong and I feared it would struggle to rise.

Planning

There wasn’t much to do, really – it took my dough three hours to double the volume, but then I left it in a warm oven with the light on. It may be different in your case. Baking – 40 minutes.

You will need something to mix the dough in, a saucepan to melt the butter in and a tin for baking. And some cling film.

Ingredients

Enough for a single loaf.

  • 200 g active white flour sourdough
  • 400 g strong white wheat flour
  • 50 g milk
  • 40 g unsalted butter
  • 250 g warm water
  • 1 teaspoon sugar (about 5 grams)
  • 1 teaspoon salt (about 8 grams)
  • a bit of butter to grease the tin

Preparation

  1. Put the milk and butter in a saucepan and heat them so that the butter starts melting. Take it of the heat and let it melt all the way. It shouldn’t be very hot as we’re dealing with yeast that we don’t want to kill
  2. Put other ingredients in a bowl and add the melted butter with milk. I used a mixer to form and knead the dough. While it’s mixing, grease your tin
  3. Put the dough in a tin, level it, cover with cling film, put in a warm place to double in volume, maybe even more – it took three hours in my case, it may take more in yours. The dough filled the tin about 40%
  4. When the dough has already doubled in volume, set the oven on. The recipe called for 210 C degrees when heating up and 200 C when baking, most likely with upper and lower heating element on, no fan. But as usual, know your oven – I’ve set mine to 180 C as it usually burns more than what recipes describe
  5. Put some steam in the oven (for instance ice cubes on the bottom of the oven) and put the bread in. Bake for 40 minutes. I stopped baking when the top started getting golden brown. I checked with a skewer that it got baked properly inside
  6. Take it out of a tin, put it on a cooling rack to cool of a bit. It was quite soft so I left it upside down until the crust got firmer

The loaf is very soft, the crust is hardly there, the flavour is very buttery, sugar is hardly noticeable at all and so is salt. Just like a toast bread. When roasting it browns nicely, it stays soft for long. I didn’t expect it to go that well to be honest.

Ostatnio regularnie karmię biały zakwas ponieważ przygotowuję Panettone. Regularne odżywianie oznacza duży naddatek. Sam zakwas jest dość aktywny – bez problemu podwaja objętość, a po 16 godzinach opada i staje się płynem – jeśli dobrze rozumiem, jest to następstwo działania proteazy.

Co do naddatku – zerknąłem ostatnio do książki Elizy Mórawskiej “O Chlebie” (źródła) i znalazłem przepis na chleb tostowy na świeżych drożdżach. Pomyślałem sobie: a jeśliby tak użyć zakwasu?

Ostatecznie dokonałem dwóch zmian: zastąpiłem 20 gramów świeżych drożdży 200 gramami zakwasu u szczytu aktywności oraz dodałem 50 gramów wody – moja mąka chlebowa jest bardzo bogata w gluten i bałem się, że ciasto suchsze nie da rady się ładnie podnieść.

Planowanie

Nie ma wiele roboty – ciasto podwoiło objętość w trzy godziny, ale należy pamiętać, że trzymałem je w ciepłym piekarniku z włączoną lampką. U Ciebie może zejść dłużej. Pieczenie – 40 minut.

Będzie potrzebne coś do mieszania ciasta, rondelek do roztopienia masła, foremka do pieczenia i folia kuchenna.

Składniki

Wystarzy na jeden bochenek.

  • 200 g aktywnego zakwasu na jasnej mące
  • 400 g mąki pszennej chlebowej
  • 50 g mleka
  • 40 g masła
  • 250 g ciepłej wody
  • 1 łyżeczka cukru (około 5 gramów)
  • 1 łyżeczka soli (około 8 gramów)
  • troszkę masła do natłuszczenia foremki

Przygotowanie

  1. Umieść masło i mleko w rondelku i podgrzej je, aby masło zaczęło się topić. Zdejmij z ognia i odłóż na bok, aby masło do końca się roztopiło. Całość nie powinna być bardzo gorąca ponieważ dodajemy to do ciasta i nie chcemy zabić drożdży
  2. Umieść pozostałe składniki w misce, dodaj masło z mlekiem. Wymieszałem ciasto mikserem. Gdy ten pracował, nasmarowałem foremkę
  3. Umieść ciasto w foremce, wyrównaj je, przykryj folią i zostaw w ciepłym miejscu do podwojenia objętości, a może nawet trochę więcej. W moim przypadku zajęło to trzy godziny, ale może zejść więcej. Ciasto zajęło początkowo około 40% objętości foremki
  4. Kiedy ciasto już podwoi objętość, nastaw piekarnik. Przepis podał 210 stopni przy nagrzewaniu, 200 przy pieczeniu, prawdopodobnie w trybie góra-dół, bez termoobiegu, ale jak zwykle: znaj swój piekarnik. Mój zazwyczaj piecze mocniej niż jest to opisane w przepisie, więc go nastawiłem na 180 stopni
  5. Umieść trochę pary w piekarniku (na przykład kilka kostek lodu na dnie) i umieść w nim chleb. Piecz przez 40 minut. Ja wyjąłem z piekarnika gdy wierzch zaczął się robić złoto-brązowy. Sprawdziłem patyczkiem czy dobrze upiekł się w środku
  6. Wyjmij go z foremki, umieść na kratce do ostygnięcia. Był dość delikatny, więc położyłem go do góry spodem aż skórka nieco stwardniała

Brakowało mi pieczenia z nowych przepisów i pisania o tym, wiesz?

Bochenek jest bardzo delikatny, prawie nie ma skórki, smak jest bardzo maślany, cukru ani soli prawie nie czuć, jak na tostowy chleb przystało. Pzzy opiekaniu ładnie brązowieje. Długo pozostaje świeży. Szczerze mówiąc nie spodziewałem się, że wyjdzie tak dobrze.
