Yeast cake challenge. Pojedynek ciast drożdżowych.

I have challenged my wife. I have challenged her to bake a cake with similar key points, but in a different way.  Here’s the story and the results.

I’ve done a number of things from the “The  Children’s Book of Baking Bread”. There was one with jam and cheese in it and I wanted to make it from the first time I saw it.

A note here: if it has eggs in it, it’s a cake to me, not bread. That’s why I also treat challah (well, maybe I could hesitate here) and brioche as a cake. Some of them could fall under my own third category. In Polish we have a term “drożdżówka” (pronounced “drosh-joov-kah”, more or less) which simply is a sweet roll made with yeasted dough. These are usually smaller than regular cakes, a single serving size. If it’s bigger, it’s a cake.

By the way, all the UK people, go to your local Polish shop and ask for a drożdżówka. You’ll get a +10 to your foreign language skills and have something delicious to enjoy with your tea.

Anyway, I got sidetracked from a sidetrack and don’t want to go deeper.

I walked into the kitchen wanting to make a cake and there was a collision in there. Gosia wanted to make a cake as well and her idea was similar to mine, so when I saw she was about to change her plans, I challenged her to a cake duel. This is the outcome.

My recipe

The cake I chose was a simple one, some dough, some cheese, some jam, some braiding, some baking. Since it’s spring and it feels wrong not to use fresh fruit, I decided to use fresh strawberries. Also, instead of cream cheese I used an only proper cheese, twaróg (tvah-roog, with a rolling “r” and a phonic “g”). When you go to your local Polish shop, ask for semi-skimmed – półtłusty (poow-t-woostyh). Together with a traditional greeting, you can simply say:

Szczęść Boże, moje uszanowanie. Pani będzie taka miła i mi poda twaróg półtłusty. bezwzględnie najlepszy. I cukiereczki dla dziateczek.

Simple. I’ll leave the pronunciation as a trivial exercise.

As mentioned, the recipe comes from “The  Children’s Book of Baking Bread” (sources).

Planning

You’ll need a baking tray with some parchment. Mixing, proofing and baking will take some 2.5 hours. It’s good to take the ingredients from the fridge for an hour or two so that they get to room temperature – at least eggs and flour/ The milk and butter don’t need it as you’ll heat them. At least if you read the recipe.

Yes, I didn’t read the recipe and threw everything into a bowl. Cold. Gosia told me to get it kneaded with a mixer and it would be ok. She saved my cake. I know I should read the recipe, I’m a recipe guy, but then I become an idiot every one and then and don’t read it and mess up again. Luckily, not all the time.

Ingredients

The dough

  • 425 g strong white wheat flour
  • 50 g sugar
  • 4 g (1.5 teaspoon) instant yeast
  • 50 g butter
  • 200 g milk
  • 1 egg

Filling

  • 150 g semi-skimmed quark
  • 20 g sugar
  • 1 teaspoon vanilla extract
  • several strawberries (prepare more, you’ll have some to eat while waiting for the cake)

Preparation

  1. Pour half of the milk into a saucepan and add butter to it. Put it on low heat until the butter melts. Take it off the heat and add the rest of milk
  2. Whisk the egg and add to a bowl with dry dough ingredients
  3. Add milk & butter. Mix till it all forms a dough, then knead for about 10 minutes. Or leave it to your mixer for some 6-7 minutes
  4. Cover with cling film and leave for an hour to rise
  5. In the meantime mix the quark, vanilla extract and sugar to form a rather dry paste
  6. Use a rolling pin or your hands (for a less level result) and make a rectangle 250 mm x 300 mm. Place it on the baking parchment, on the tray
  7. Align the dough horizontally.
    From the corners on your left hand side  cut out squares 4 cm x 4 cm. Next, cut out a bit more – a right triangle with 4 cm and 2 cm sides. In result, you’ve cut out a trapezium. Can you calculate it’s area?
    From the corners on the right hand side cut out trapeziums with the bases of 2 cm and 4 cm and 4 cm of height.
    You’ll be left with tho wings up and down and two margins left and right. Cut the wings 11 times, creating 12 strips to braid.

    The dough you’ve cut out can be used to make small rolls. I left it for my kids to get creative

  8. Spread the cheese in the middle, more or less taking up 15 x 20 cm. Put halved strawberries on it

  9. First, fold the side margins – you can  stretch them a bit so that they are a thinner.
    Next start braiding the wing strips alternately from up and down

  10. Cover the cake with a tea towel and leave in a worm place for 45 minutes
  11. About 15 minutes before baking set the oven to 190 C degrees without a fan. Know you oven
  12. Bake for 25 minutes, until it catches a nice colour. Be careful not to overbake it which I have done

Summary

I was expecting strawberries to release some juice, but I was surprised to see it flow from the cake onto the parchment. It’s not really a problem, just an observation. With cheap parchment I would have problems detaching the cake from it.

Using strawberries was a spot-on. They were very tasty, very aromatic. I think I also used less sugar then I would add with jam.

Gosia’s recipe

I saw this yeast cake with a mascarpone cheese a while ago on Pinterest and I wanted to make it ever since. We like yeast cakes and this one sounded very tempting.

The recipe comes from Candy Company blog. The author originally used a cornus filling. I used strawberry jam instead.

Planning

About 2.5 hours is needed for kneading, proofing and baking, but you should also remember that the ingredients should be in room temperature – take them out of the fridge a couple hours before you begin. Cold ingredients will mean you’ll need more time for kneading.

Prepare a round baking tin and line it with baking parchment. I used a sponge cake form with removable side walls. I placed the paper on the bottom, clipped it with the sides and then cut of the excess.

Ingredients

  • 115 g sugar
  • 2 eggs
  • 125 g  whole milk
  • 125 g mascarpone cheese
  • seeds from one vanilla pod or a teaspoon of vanilla extract
  • 450 g plain wheat flour (maybe increase it to 500 g, my dough was quite runny)
  • pinch of salt
  • 25 g fresh yeast or 7 g instant yeast
  • 100 g melted butter
  • half a jar of strawberry jam for the filling

Preparation

  1. Feed the fresh yeast – add a spoon of sugar from the ingredients to it and work it into a runny substance. You don’t need to do it with instant ones
  2. Beat the eggs with sugar with a whisk
  3. In a bowl, mix mascarpone, milk and vanilla into a smooth paste and pour into the beaten eggs. Next add sifted flour, yeast, salt and melted butter. I used a dough hook
  4. Mix the dough with a mixer for about 5-7 minutes. By hand, knead until it comes off your hands (around 15 minutes)
  5. Put the dough aside to rise for 40-60 minutes
  6. The proofed dough should be flatten with a rolling pin , then spread jam on it and roll the dough into a swirl. Cut the swirl along its length, then swirl it into a spiral to form “a line”. Lastly put it into a tin, placing it along the walls to form a round cake. You can also spin it into a spiral and transfer it into the tin then. If you’re afraid it will stick, spread butter on the walls. I didn’t

  7. Leave the cake to rise for about 30 minutes
  8. Bake in 175 C degrees for about 40 minutes (till a skewer used to test the dough comes out dry

The proofed dough was very runny, hard to braid and transfer it into the tin. Next time I’ll either remove some milk or add some flour.

The cake turned out delicious, not too sweet, soft and delicate, and fresh for long, which doesn’t happen with yeast cakes very often.

Conclusions

There is one great disadvantage with such a challenge: you have a cake at home for five days and we’ve seen ants coming from the garden. They disappeared when we ate the last piece.

Gosia: Tomek’s cake was delicious, not too sweet, but the sweetness of strawberries made it very good. It was more dense than mine and because of using the bread flour it felt more like a bun, not cake. The Quark and strawberries and a good idea for braiding – what more could you want? Event the kids chose his cake…

Tomek: I think Gosia’s cake was much more delicate and moist. How many times have you had a yeast cake at home that was nice and moist even five days after baking?

Robiłem już kilka rzeczy z książki “The  Children’s Book of Baking Bread”.  Był tam przepis na ciasto z dżemem i serem, które chciałem zrobić odkąd go zobaczyłem.

Wszedłem do kuchni, aby je zrobić, a tam nastąpiła kolizja. Gosia też chciała zrobić ciasto, podobne do mojego. Kiedy zobaczyłem, co się święci, wyzwałem ją na pojedynek. Oto rezultat.

Mój przepis

Przepis jest bardzo prosty: trochę ciasta, trochę sera, trochę dżemu, trochę zaplatania, trochę pieczenia. Ponieważ jest wiosna, zastąpiłem dżem świeżymi truskawkami, a kremowy serek z oryginalnego przepisu – twarogiem półtłustym.

Planowanie

Potrzebna będzie tacka do pieczenia z papierem.  Mieszanie, wyrastanie i pieczenie zajmie jakieś 2,5 godziny. Warto wyjąć składniki z lodówki, aby się ogrzały (jajka, mąka). Masło i tak topisz, a mleko podgrzewasz. Jeśli czytasz przepis.

Tak: nie przeczytałem przepisu i wrzuciłem wszystko do miski. Zimne. Gosia powiedziała, żebym wrzucił to do miksera i będzie ok. Uratowała mi ciasto. Niby doskonale wiem, że tak nie wolno, ale potem debil jeden znów nie czytam i zaliczam podobną wpadkę. Dobrze że nie za każdym razem.

  • 425 g mąki pszennej chlebowej
  • 50 g cukru

Nadzienie

Przygotowanie

  1. Wlej połowę mleka do rondelka, dodaj masło i podgrzej na niskim ogniu. Gdy masło się roztopi, zdejmij z ognia i dodaj resztę mleka
  2. Jajko rozbij i rozkiełtaj na w miarę jednolitą masę. Suche składniki ciasta włóż do miski i dodaj jajko
  3. Całość zalej mlekiem z masłem. Wymieszaj aż się połączą w kulę, po czym wyrabiaj przez jakieś 10 minut. Lub zostaw to mikserowi na jakieś 6-7
  4. Przykryj folią i pozostaw na godzinę do wyrośnięcia
  5. W międzyczasie rozgnieć ser, dodaj esencję i cukier i rozrób w miarę możliwości
  6. Znajdź linijkę i rozwałkuj lub rozgnieć (będzie mniej równo) ciasto do rozmiarów 250 mm na 300 mm. Połóż na papierze do pieczenia, na foremce/tacce
    Ułóż ciasto przed sobą poziomo.
    Z narożników po lewej stronie wytnij kwadraty po 4 cm każdy. Następnie wytnij jeszcze trójkąt prostokątny o przyprostokątnych 4 cm i 2 cm. Masz też pełne prawo wyciąć od razu trapez prostokątny o podstawach 6 cm i 4 cm. Oblicz pole powierzchni trapezu.
    Z narożników po prawej stronie wytnij trapezy prostokątne o wysokości 4 cm i podstawach 2 cm i 40 cm.
    Powstałe skrzydełka natnij 11 razy, tworząc 12 pasków do zaplatania. Masz też boczne zakładki, które zawiniesz przed zaplataniem.

  7. Rozłóż ser na środkowej sekcji ciasta, mniej więcej w rozmiarze 15 x 20 cm.

  8. Najpierw zawiń boczne zakładki – możesz je trochę rozciągnąć, aby nie spowodowały przerostu końców ciasta.
    Następnie rozpocznij przeplatanie pasków, na przemian góra i dół

  9. Przykryj ciasto ściereczką i pozostaw do wyrośnięcia w ciepłym miejscu na 45 minut
  10. Na 15 minut przed pieczeniem włącz piekarnik na 190 stopni bez termoobiegu. Znaj swój piekarnik
  11. Piecz przez 25 minut lub do zarumienienia. Uważaj żeby nie przypiec jak ja

Podsumowanie

Z drobnych zaskoczeń mogę podać, że truskawki puściły więcej soku niż myślałem i troszkę wypłynęło na papier. To nie problem, tylko taka obserwacja. Na kiepskim papierze by się przykleiło.

Użycie truskawek zamiast dżemu było strzałem w dziesiątkę. Były bardzo smaczne i aromatyczne, pewnie wyszło też trochę mniej cukru.

Przepis Gosi

Pomysł na ciasto drożdżowe z dodatkiem serka mascarpone wypatrzyłam jakiś czas temu na Pintereście i od dłuższego czasu miałam ochotę je zrobić, ponieważ bardzo lubimy ciasta na drożdżach.

Przepis pochodzi z bloga Candy Company. W oryginalnym przepisie wykorzystano nadzienie z derenia. Ja użyłam dżemu truskawkowego.

Planowanie

Potrzeba około 2,5 godziny na robienie, wyrastanie i pieczenie, ale należy pamiętać o tym, by składniki do ciasta były w temperaturze pokojowej, czyli poleżały kilka godzin na blacie w kuchni. Zimne składniki wydłużą czas wyrastania ciasta.

Przygotuj okrągłą foremkę, wyłóż ją papierem. Ja użyłam tortownicy, papier położyłam na dno, zacisnęłam na nim ścianki i obcięłam nadmiar.

  1. Ze świeżych drodzy przygotowujemy zaczyn – rozrabiamy z łyżką cukru. Suchych drożdży nie trzeba rozrabiać
  2. Ucieramy jajka z cukrem końcówką do ubijania
  3. W miseczce mieszamy mascarpone,  mleko i wanilię na gładką masę i wlewamy do utartych jajek,  następnie dodajemy przesianą mąkę, drożdże, sól i płynne masło. Użyłam haka do wyrabiania ciasta
  4. Wyrabiamy ciasto mikserem około 5-7 minut, a ręcznie do momentu, aż zacznie odchodzić od dłoni, około 15 minut
  5. Odkładamy je w ciepłe miejsce do wyrośnięcia na 40-60 minut
  6. Wyrośnięte ciasto wałkujemy na kształt prostokąta, smarujemy dżemem i zwijamy jak roladę. Następnie rozcinamy roladę wzdłuż i zawijamy wzdłuż własnej osi (jak zaplatanie liny), a następnie w wieniec
  7. Wieniec przekładamy do natłuszczonej foremki (ja nie natłuszczałam, bo lubię życie na krawędzi – przylgnie czy nie?) i odkładamy do wyrośnięcia na ok. 30 minut

  8. Pieczemy w 175 C przez ok. 40 minut (do suchego patyczka)
  9. Wyrośnięte ciasto jest bardzo luźne, trudno się je zwijało i przekładało do foremki. Następnym razem dam mniej mleka albo więcej mąki

Ciasto wyszło pyszne, nie za słodkie, miękkie i delikatne, długo jest świeże, co przy ciastach drożdżowych się nie zdarza.

Podsumowanie

Jest jedna wada takiego pojedynku: przez pięć dni w domu było ciasto i mrówki złaziły się z ogrodu. Zniknęły po zjedzeniu ostatniego kawałka.

Gosia: Ciasto Tomka było pyszne, mało słodkie ale słodycz truskawek dobrze je uzupełniało,  cięższe niż moje,  ze względu na  użytą mąkę chlebową przypominało bułkę.  Twaróg i truskawki plus fajny pomysł na zaplecenie ciasta, czego chcieć więcej? Nawet dzieci wybrały ciasto Taty…

Tomek: Moim zdaniem Gosi ciasto było dużo bardziej delikatne i wilgotne. Ile razy mieliście w domu ciasto drożdżowe równie dobre pierwszego jak i piątego dnia od pieczenia?
