I wanted to make oat biscuits with some sesame, and wanted to dip them in chocolate. I hoped they would slightly resemble the biscuits I know from Poland, called Sasanki. The proportions are different and I didn’t use wheat flour at all.

I had a vision of a recipe for this occasion, and it turned out quite decent. It’s even possible to make it gluten free (I didn’t but it’s an option).

Tempering chocolate is one thing I did not do and encourage to read about, as it appears to be quite simple. If you simply melt the chocolate and then dip things in it, the chocolate will melt easier. Tempering gets the chocolate structure organised which in turn increases the melting point. None, it took me about 30 minutes to prepare the biscuits for baking, then they baked for 10 minutes, then after cooling down, I melted the chocolate and dipped them.

I used a food processor to grind the oats and sesame. I started with sesame, as I suspected it would stick a bit, then I did oats that gathered all of the remaining sesame.

For melting the chocolate you’ll need a saucepan, bowl and water. Read about tempering the chocolate above, it may help you on this.

Ingredients

Makes 40-45 biscuits.

  • 400 g rolled oats
  • 150 g sesame seeds
  • 250 g soft butter
  • 110 g dark soft sugar
  • pinch of salt
  • 300 g of chocolate for coating (optional) – I used dark chocolate

Preparation

  1. Turn the oven on to 170 C with a fan (know your oven)
  2. Grind sesame seeds and put them in a bowl
  3. Grind oats and add them to the bowl
  4. Add sugar and pinch of salt
  5. Add butter in small chunks, then use your hands to work it all into a dough. A nice ball of dough will be formed
  6. Divide the dough in 20 g portions. Roll each portion into a ball and place on the baking sheet with some distance, as the biscuits do expand slightly in the oven. Press the ball with your fingers to make a relatively even 5 mm thick round biscuit

  7. Bake for about 10 minutes
  8. After taking out of the oven, give the biscuits some 5 minutes to cool down and transfer somewhere to cool down a bit. I used a cooling rack

  9. Melt the chocolate (can be done later, like next morning). Just remember the tempering technique for chocolate
  10. Place each biscuit on a fork and dip it in the chocolate (only the bottom)

  11. Put on a baking parchment and pop into the fridge to get stiff. It will take a bit

I had to make space in the fridge, so I put the biscuits in boxes with bits of paper to separate the layers. They cooled down nicely after a day in the fridge.

I hope you’ll enjoy them. They were simple and quick to make. My kids did not like them, possibly because of dark chocolate being used.

I was surprised that my food processor was capable of working with sesame that well.

Chciałem zrobić ciasteczka owsiane z sezamem, polane czekoladą. Miałem nadzieję, że będą przypomniały nieco Lidlowe Sasanki. Składem różnią się znacznie, bo nie użyłem pszennej mąki.

Miałem w głowie koncept tego przepisu, który sprawdził się nieźle w wykonaniu. Można nawet zrobić wersję bezglutenową (ja nie robiłem, ale można – dobierając bezglutenowe płatki owsiane i czekoladę).

Jedno czego nie zrobiłem, a powinienem byłem, jest hartowanie czekolady. Okazuje się być dość łatwe. Czekolada niehartowana łatwiej się topi, hartowana ma inną strukturę i wyższą temperaturę topnienia. Przeczytałem o tym na Cooking For Engineers.

Brak. Przygotowanie ciastek zajęło 30 minut, pieczenie 10 minut, po ostygnięciu zanurzyłem je w stopionej czekoladzie.

Ziarno i płatki zmieliłem końcówką do siekania w robocie kuchennym. Zacząłem od sezamu, bo wiedziałem, że będzie się trochę kleił. Potem owies zgarnął resztki sezamu i wszystko ładnie wyleciało z pojemnika.

Do topienia czekolady będzie potrzebny rondel, miska i woda. Poczytaj o hartowaniu powyżej, może się przydać.

Składniki

  • 110 g ciemnego cukru (tego gnieciucha, Muscovado czy jak)
  • szczypta soli
  • 300 g czekolady do polania (opcjonalne) – ja użyłem gorzkiej

Przygotowanie

  1. Nastaw piekarnik na 170 stopni z termoobiegiem (znaj swój piekarnik)
  2. Zmiel ziarna sezamu i wrzuć do miski
  3. Zmiel płatki owsiane i wrzuć do miski
  4. Dodaj cukier i szczyptę soli
  5. Dodaj masło w małych kawałkach, następnie dłońmi wyrób ciasto. Powinna uformować się ładna, zwarta kula
  6. Podziel ciasto na porcje po 20 g. Każdą uformuj w kulkę, po czym ułóż na tacy do pieczenia w pewnej odległości, albowiem ciastka nieco się rozszerzą w piekarniku. Palcami rozpłaszcz kulkę w dysk o grubości około 5 mm

  7. Piecz przez około 10 minut
  8. Po wyjęciu z piekarnika daj ciastkom jakieś 5 minut na ostygnięcie, po czym przenieś je gdzieś do całkowitego ostygnięcia. Ja przełożyłem na kratkę

Musiałem zrobić miejsce w lodówce, więc przełożyłem ciastka do pudełek i rozdzieliłem warstwami papieru do pieczenia. Ładnie przestygły przez dzień w lodówce.

Mam nadzieję, że Ci posmakują. Są bardzo proste i szybkie do zrobienia. Moje dzieci nie polubiły ich, pewnie przez czekoladę gorzką.

Zaskoczył mnie tu mój robot kuchenny – nie spodziewałem się, że bez młynka zdoła tak dobrze posiekać sezam.

  1. Mam wrażenie, że dzieci rzadko kiedy lubię zdrowe rzeczy 🙂 Żarcik taki 🙂 Ale na poważnie, to super przepis. Uwielbiam płatki owsiane, ciasteczka też, podobnie jak granolę. 🙂
