Today we’re doing something quick and easy, and fun for the kids.

Antoni, our son, keeps trying to help in the kitchen. He makes bread when we’re not looking, demands that we let him do things in moments when we need to focus on doing them. A usual two and a half year old. Usually we simply need to clean the floor to get rid of the flour, disassemble the blender to take out the seeds that fell somewhere unplanned, or throw away a couple kilos of flour because he added a whole 1 kilo bag of salt to it (actually, I’m exaggerating here, he’s very precise – he threw all the the salt precisely on the flour scoop in the bag, so when I started making bread, I noticed that the wholemeal flour was too white). But in those rare moments when we really need to avoid distraction, we need a plan B. He wanted to make bread – he made it.

My first contact with matzos comes from childhood. My Mom comes from a village of Raków where there is a tradition of preparing holiday dish called dzionie (pronounced like “Johnny”, but with an e like in “meh” added at the end). It’s kind of a baked sausage staffed with a mixture matzo bread and boiled pork dewlap. My grandmother made it my Mom and my Aunts learned to do it, I made it for Christmas last year (I’ll make a small digression off the digression here to let my sisters know. Ewa, Ula: I challenge you to make dzionie this Christmas). Anyway, Mom used to bake matzos a couple day earlier and we used to knick a bit.

We were preparing a party last weekend and needed the kids to give us some time to do it. Antoni was really desperate to do something, so I made this.

Planning

None. Find the biggest bowl/pan you have.

Ingredients

Thus is enough for one big flatbread

  • 140 g strong wheat flour
  • 100 g water
  • A tablespoon of olive oil
  • Pinch of salt

Preparation

  1. Put all ingredients in a bowl2016-11-16_maca1
  2. Give your child a fork and tell them to mix the dough. It needs to come together really well. It will take them some 10-20 minutes with all the distractions. If you need more time, add some water and some flour and ask to repeat mixing. I repeated the recipe yesterday and I could see the dough became springy and held together after about ten minutes
  3. Give them a bit of place for rolling and a rolling pin, flour the surface and let your child flatten it really flat. If it sticks, dust with more flour. It does get messy, but at least your bored child does not burn down the house (just yet). We made it directly on a baking tray2016-11-16_maca2
  4. Set the oven to some 180C and ask your child to let you know when it gets ready (I have a light indicator, maybe you also have a thermometer)
  5. Put the bread into the oven and ask your child to observe the growing bubbles and changing the colour
  6. After about 10-15 minutes it should be ready to take out. Let it cool on a cooling rack (a couple minutes)

At all times remember to instruct the child and explain the expected outcome, and remind of health and safety (wash hands, do not touch hot things etc.).

I’m sure that it’s not what jews normally do, but it works. And the child is happy, and you get some time for whatever you wanted to do and a happy child. Antoni ate his matzo immediately and was very satisfied with the outcome.

You can also add a couple variations: add some sesame or poppy seeds, or some coarse salt on top. Just press it against the dough so that it sticks.

Antoni, nasz syn, ciągle próbuje pomagać w kuchni. Robi chleb gdy nie patrzymy, domaga się jakiegoś zadania gdy my próbujemy się skupić na jego wykonaniu. Standardowy dwuipółlatek. Zazwyczaj kończy się na zamiecieniu rozrzuconej mąki, rozebraniu blendera, żeby wyciągnąć ziarenka ze środka, lub wyrzuceniu kilku kilo mąki, bo wrzucił do niej kilogramowy worek soli (tak naprawdę przesadzam – był bardzo precyzyjny i wysypał na szufelkę do mąki w worku, więc nabierając zdziwiłem się tylko, że żytnia pełnoziarnista jest tak jasna). Ale w tych kilku nielicznych chwilach bardzo chcemy uniknąć tej nieocenionej pomocy i potrzebujemy planu B.

Pierwszy raz kontakt z macą miałem w dzieciństwie. Moja mama pochodzi z Rakowa, gdzie funkcjonuje tradycja pieczenia dzionia – świątecznego dania, będącego czymś jak kiszka ziemniaczana, tylko napchana mieszaniną macy i ugotowanego podgarla. Dzionie piekła moja Babcia, potem moja Mama i Ciocie, rok temu upiekłem i ja (mała dygresja od dygresji, żeby dać znać Siostrom. Ewa, Ula: rzucam Wam wyzwanie dzioniowe na to Boże Narodzenie). W każdym razie, Mama piekła mace kilka dni przed świętami, a my podbieraliśmy po trosze.

W weekend szykowaliśmy przyjęcie i potrzebowaliśmy trochę czasu od dzieci. Antoni był zdesperowany żeby coś zrobić, więc daliśmy mu to.

Składniki

Wystarczy na jeden duży placek.

  • 140 g mąki pszennej chlebowej
  • 100 g wody
  • Łyżka oliwy
  • Szczypta soli

Przygotowanie

  1. Włóż wszystkie składniki do miski2016-11-16_maca1
  2. Daj dziecku widelec i poproś, żeby zamieszało ciasto. Musi dobrze się wyrobić, być elastyczne i sprężyste. Zajmie mu to 10-20 minut razem ze wszystkimi rozkojarzeniami. Jeśli potrzebujesz więcej czasu, dodaj trochę mąki i wody i poproś o domieszanie. Powtórzyłem przepis wczoraj i wyraźnie widziałem, jak po około 10 minutach ciasto stało się sprężyste i trzymało się siebie bardziej niż miski i widelca
  3. Daj dziecku miejsce, gdzie może rozwałkować chlebek na bardzo cienko. Pewnie się klei, więc posyp mąką. Tu się zrobi trochę bałaganu, ale przynajmniej zejdzie dziecko nie spali (jeszcze) domu. My wałkowaliśmy bezpośrednio na tacce do pieczenia2016-11-16_maca2
  4. Ustaw piekarnik na jakieś 180C i poproś dziecko, żeby przypilnowało, kiedy się nagrzeje (u nas gaśnie wtedy diodka ogrzewania, może masz termometr u siebie)
  5. Włóż chleb do piekarnika i poproś dziecko, aby pilnowało, jak rosną bąbelki i zmienia się kolor
  6. Po około 10-15 minutach maca powinna być dobra do wyjęcia. Daj jej ostygnąć na kratce (kilka minut)

Pamiętaj kierować dzieckiem i tłumaczyć spodziewany rezultat oraz przypominać o bhp (umyj ręce, nie dotykaj gorących rzeczy etc.).

Na pewno nie jest to dokładnie to samo, co dla siebie robią żydzi, ale działa I dziecko jest zadowolone, a Ty zyskujesz trochę czasu na to, na co go potrzebujesz. Antoni był bardzo zadowolony z siebie i od razu zjadł co zrobił.

Możesz też dodać kilka urozmaiceń: posypać sezamem, makiem lub grubą solą. Pamiętaj tylko przycisnąć je do chlebka, żeby się trzymały.
